都市廚房札記之飲食消費預付制服務--HowMind Letter Lab.
HowMind Letter Lab. / 都市廚房札記之飲食消費預付制服務
HowMind Letter Lab.長期觀察都市消費文化生活、學校及博物館等都市的社會教育組織發展，以消費方案媒合社會資源，建構支持家庭功能的社會系統網絡。
都市廚房札記為HowMind Letter Lab.記錄都市飲食空間中的生活故事，也同時開發一些都市生活服務，讓都市生活者藉由都市生活消費行動的改變，用自己的行動來改善都市環境空間，提升個人的都市生活品質，並成為創新人力的企業。
都市廚房札記之飲食消費預付制服務，即都市消費者預先付費三日內想購買的飲食，以獲得最新鮮的食材品質外，還可以參與下列改善都市生活空間的行動：
1. 提供飲食的各類商家在接獲訂單及貨款後，才立即訂購各項食材，此預付制減少物流形成的空氣污染及商家以空調系統儲存食材形成的熵能量。
2. 在選訂取貨時間後，可節省排隊時間或買不到商品的問題。可以有更多時間在都市空間中享用飲食，以提升生活品質及客戶服務品質。
3. 各商家接到一天工作日的訂單量，執行一天的工作日。在無接到訂單量的時間中，可助益人力資源的管理及相關成本管理。若消費者的訂單量達一個月期(由商家評估損益成本攤平期間)，節省的電量等成本可由商家決議回饋消費者或辦理員工休閒活動，讓消費者的家庭或員工家庭有足夠的時間及經濟能力，參與更多的親子活動等休閒生活。
4. 參與者可獲得多項優惠以參與各類藝文學習活動，如您預付消費的額度達到商家節能成本標準，以此節能額度獲得藝文學習活動的優惠，此額度列為個人建構都市生活圈的人力資本統計，此統計乃記錄個人消費生活助益都市生活品質的價值指標為HowMind Letter Lab.開發都市生活方案的依據之一。如琴藝空間的鋼琴老師提供鋼琴家教，您因為預付制而獲得的休假時間來學習鋼琴的時數及付費的金額，將會是您成為都市人力資本的記錄。

Grand vin de Bordeaux波爾多大地的釀酒
從Medoc附近的Gironde 河往波爾多(Bordeaux),則可分別拜訪波爾多右岸及波爾多左岸的葡萄園
因為五大堡聞名的吉倫特河(Garonne)西部--名酒釀造地" 波爾多左岸"
上游的多爾多涅河(Dordogne)東部,以Pomerol與Saint Emilion為中心的葡萄酒產地-"波爾多右岸"
喝葡萄酒也可以認識到法國字的意涵,
如Fronsac, AOC, 2006, Chateau Moulin Haut‧ Laroque, Moulin即風車之意--悠然迴轉的風車隨大自然運行,由擔任過Fronsac村村長的Jean‧Noel Herve先生釀造,因為不使用除草劑的鬆軟土壤培育出的葡萄,可以享受此悠然暢意的香醇感,也可以搭配鴿肉享用務
波爾多白葡萄酒Semillon, 白蘇維翁具有俐茖而清爽的風味與華麗優雅舞會的勃艮地夏多內
波爾多右岸
Saint Emilion有很多的丘陵地,分成石灰和黏土含量多的"Cote"(山丘)區及類似梅鐸產區碎石含量多的"Graves"(砂礫)區, Cote區以梅洛為主的葡萄酒,Graves區以卡本內弗朗為主的葡萄酒
Saint Emilion以前是往基督教聖地Saint Jacques朝聖的人們所投宿的城鎮,故才繁榮(羅馬帝國時代己開始釀葡萄酒),而釀葡萄酒去除酒渣的作業" Collage"(蛋白凝結澄清),會用到蛋白,因此波爾多修道院的修女使用剩下的蛋黃製作可麗露(Canele,波爾多小蛋糕,又稱天使之鈴), Saint Emilion另一個特產是Macaron(馬卡隆,法國的杏仁小圓餅)

都市餐廳可提供享用餐點的空間,也可與消費者藉由活動來溝通
For example-- Pizza restaurant with students of English , parents and children of community
例如: 比薩店與英文系學生,社區的家長與孩子
Pizza chief can teach parents and children, students how to have a great pizza. Students can help chief to write down English operation or do pizza cutlure. Parents and children can enjoy their food and have chance to know their children more.
主廚介紹製作比薩,學生說明比薩文化或英文翻譯,家長和孩子享受食物及有機會更了解孩子等
